Quattrocento is an Italian cheese, produced using 100% ITALIAN MILK, microbial rennet and no lysozyme, it is 100% Vegetarian.

A special Italian Hard Cheese with a slightly milder taste than Parmesan and is suitable for vegetarians unlike  a lot of other hard cheeses.  Cooks and eats as any other hard cheese and contains no preservatives
